White Sauce Pasta Recipe
Ingredients (for 4 servings):
- 400g (14 oz) pasta (penne, fettuccine, or spaghetti work great)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups (480 ml) whole milk (room temperature)
- 1/2 cup grated Parmesan cheese (optional, for extra flavor)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup heavy cream (optional, for extra richness)
- Fresh parsley (optional, for garnish)
Optional Add-ins (if you want to enhance the flavor):
- 1/2 cup sautéed mushrooms
- 1 cup cooked chicken (shredded or diced)
- 1/2 cup cooked spinach
- Fresh garlic (1-2 cloves, minced)
- A pinch of red pepper flakes (for a bit of heat)
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta, reserving about 1/2 cup of pasta water for later (this helps loosen the sauce if needed).
2. Prepare the White Sauce (Bechamel):
- In a large skillet or saucepan, melt the butter over medium heat.
- Once melted, add the flour and whisk constantly to form a smooth paste (this is called a roux). Cook the roux for about 1-2 minutes to remove the raw flour taste, but don’t let it brown.
- Gradually add the milk, whisking constantly to avoid lumps. You can pour it in slowly and keep stirring.
- Continue cooking the sauce on medium heat, stirring frequently, until it thickens (about 3-5 minutes). It should coat the back of a spoon.
- Once the sauce has thickened, stir in the Parmesan cheese (if using), and season with salt, pepper, and a pinch of nutmeg (if desired). Add the heavy cream if you want a richer sauce.
3. Combine Pasta and Sauce:
- Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, you can add some of the reserved pasta water, a little at a time, until you reach the desired consistency.
- If you’re adding any optional ingredients (such as mushrooms, chicken, or spinach), mix them into the pasta now.
4. Serve:
- Divide the pasta among plates, and garnish with fresh parsley or more grated Parmesan cheese if desired.
- Serve immediately while hot and creamy.
Tips:
- For a thicker sauce: If you want a thicker white sauce, you can let the sauce simmer a bit longer until it reduces. Alternatively, you can use a bit less milk.
- For a smoother texture: Use whole milk and make sure to whisk constantly while adding the liquid to avoid lumps.
- Flavor variations: You can easily make this a richer, more flavorful dish by adding sautéed garlic, onions, or even some bacon bits for extra depth.
