Ingredients for Kaju Katli

  • 1 cup cashew nuts (kaju)
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 teaspoon cardamom powder
  • 1 teaspoon ghee (clarified butter)
  • Edible silver leaf (optional, for garnish)

Instructions

  1. Prepare Cashew Nuts:
    • Soak the cashews in water for about 2-3 hours, then drain and dry them completely.
  2. Make Cashew Powder:
    • Grind the cashews into a fine powder using a food processor. Be careful not to over-grind, or it will turn into cashew butter.
  3. Prepare Sugar Syrup:
    • In a pan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves. Let it simmer until you reach a one-string consistency (when you take a drop between your fingers, it forms a single thread).
  4. Combine Ingredients:
    • Reduce the heat and add the cashew powder and cardamom powder to the sugar syrup. Mix well and cook for 2-3 minutes until the mixture thickens and starts to leave the sides of the pan.
  5. Knead and Roll:
    • Grease your hands and a clean surface with ghee. Transfer the mixture to the surface and knead it lightly. Roll it out into a thin sheet (about 1/4 inch thick).
  6. Cut into Pieces:
    • Allow it to cool slightly, then cut it into diamond or square shapes.
  7. Garnish:
    • If using, place edible silver leaf on top of each piece.
  8. Serve:
    • Let it cool completely before serving. Store in an airtight container.
