Ingredients for Fried rice

  • 2 cups cooked rice (preferably chilled, for best texture)
  • 2 tablespoons vegetable oil (or sesame oil for more flavor)
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small carrot, diced
  • 1/2 cup peas (fresh or frozen)
  • 1/2 cup bell pepper, finely chopped (any color)
  • 1/4 cup corn kernels (optional)
  • 2-3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil (optional)
  • 1/4 teaspoon white pepper (optional)
  • Salt to taste
  • 2-3 green onions, chopped (for garnish)
  • 1 tablespoon ginger, minced (optional)
  • 1 tablespoon rice vinegar (optional, for extra tang)

Instructions:

  1. Prepare the rice: If you’re using freshly cooked rice, spread it out on a tray to cool down. It’s best to use day-old rice since it’s drier and will fry better. Break up any clumps before using.
  2. Heat the pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. If you’re using sesame oil, you can add a teaspoon of it here for extra flavor.
  3. Sauté the aromatics: Add the chopped onion, garlic, and ginger (if using) to the hot oil. Stir-fry for 1-2 minutes until they soften and become fragrant.
  4. Cook the vegetables: Add the diced carrots, peas, bell peppers, and corn. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp. You want to maintain a little crunch to them.
  5. Add the rice: Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice for 5-7 minutes, allowing it to fry and get lightly crispy.
  6. Season the rice: Add the soy sauce, sesame oil (if using), white pepper (if using), and rice vinegar (optional). Stir everything together until the rice is well-coated with the seasoning. Taste and adjust the seasoning with more soy sauce or salt if needed.
  7. Finish and serve: Once everything is well mixed and heated through, remove the pan from the heat. Garnish with chopped green onions and serve hot.
